- 3 Large eggs, lightly beaten.
- 3 Medium carrots, grated.
- 4.5 Oz Brown sugar.
- 4.5 Oz Sunflower oil.
- 3.5 Oz Raisins.
- Zest of 1 orange, grated.
- 4.5 Oz Self-rising flour.
- 1 Tsp Bicarbonate of soda.
- 1 Tsp Ground cinnamon.
- 1/2 Teaspoon freshly grated nutmeg.
- 4.5 Oz Icing sugar.
- 2 Tablespoons orange juice.
Preheat the oven to 365º F. Grease and line the base and sides of a 7 inch x 7 inch springform pan with baking sheets. Place the sugar, oil and beaten eggs in a mixing bowl and mix lightly with a wooden spoon. Stir in the carrots, raisins and orange zest.
In a separate bowl, mix the flour, bicarbonate of soda and spices. Transfer the mixture to the bowl with the eggs and mix until all the ingredients are well incorporated. Next, pour the mixture into the baking pan and bake until cooked through, around 45 minutes, Let it cool on a wire rack before unmolding.
Beat icing sugar and orange juice in a small bowl until smooth and runny, and drizzle over the top of the cake in diagonal lines. This recipe yields 15 sevings.
