Turn on the heat and try this delicious recipe good for health and for those with a discerning palate!
- 6 lg. Baking apples.
- 1c. Chopped Brazil nuts.
- ½ c. Water.
- ½ c. Chopped, pitted dates.
- 1/3 c. Chopped crystallized ginger.
- 1 tsp. Powdered sugar.
- 1 c. Light com syrup.
Core apples almost through, leaving a little flesh at the blossom. Pare about 1/3 of the way down from the stem end. Combine Brazil nuts, dates and crystallized ginger and fill centers of apples with the nut-fruit mixture. In a saucepan, combine the syrup and powdered sugar.
Cook for 5 minutes. Drizzle 1/2 syrup mixture over apples and place them in the steamer insert. Place 1/2 cup water in your Magefesa pressure cooker and place trivet and steamer insert in cooker.
Close lid securely, bring to pressure and reduce heat. Cook for 5 minutes. Remove cooker from heat and remove lid according to manufacturer’s instructions. Baste again with syrup and sprinkle with sugar.
Place steamer insert in glass dish and place under broiler (4 minutes below source of heat) adding additional sugar and basting for 15 minutes.
