Spanish Cheese Custard by Magefesa USA



  • 3.5 Oz butter.
  • 10.5 Oz sugar.
  • 1/2 Pound fresh cottage cheese.
  • Zest of 1 lemon, grated.
  • A pinch ground cinnamon, or more to taste.
  • 4 Eggs, at room temperature.
  • 3 Oz Flour.


Melt the butter in a medium Magefesa saucepan over low heat. Beat the eggs with the sugar and melted butter. In a separate bowl, combine the cheese with the lemon zest and the cinnamon. Add it to the egg mixture, beating well until you get a creamy, homogeneous paste.
Incorporate flour gradually, then pour the mixture into a shallow greased mold. The mixture should not stand more than 1.2 inch high.  Place in a preheated oven and cook at 390º F for 30 minutes, until the surface turns golden brown and the dough is set.
Recipe yields 6 servings.
