A succulent Appetizer!
Chicken “Rabas” with onion and curry mayonnaise sauce
- 4 Chicken breasts.
- 2 Small onions.
- 1 Cup mayonnaise.
- 1 Tablespoon curry.
- Mild olive oil 0.4°
- Flour for frying.
- 60 gr. Fried kernel corn.
Mix mayonnaise, curry and finely chopped parsley. Reserve in the fridge.
Cut chicken breasts into filets and then into long thin strips.
Peel and chop onion into strips.
Grind corn in a Chip Chop Magefesa food processor and mix with flour for frying.
Season chicken with onion and flour with the above mixture.
Fry in abundant hot olive oil. Remove from pan and reserve on a paper towel.
Serve with French fries or salad, along with the curry mayonnaise.
They are similar in appearance to fried squid, known as “Rabas” in the Spanish region of Cantabria, hence the name chicken “Rabas”. The Fried kernel corn can be purchased in packages at any sweetshop. The corn coating will bring this unique taste and delicious crispy texture to the recipe.
