- 1/2 Fully-cooked ham (5 lbs approx)
- 1/2 Cup rosemary honey.
- 3/4 Cup mustard.
- 2/3 Cup brown sugar.
- 2 Tablespoons sherry vinegar.
- 12 Cloves.
- Mild olive oil, 0.4 °.
- 2 Garlic cloves.
Place garlic and a pinch of salt in a mortar. Add a little oil and mix until well combined. Pour the garlic oil mixture into an ovenproof dish and place the ham in it.
Make some superficial cuts into the fatty side of the ham creating diamond pattern across the meat. Insert the cloves into some of the cuts.
Let stand at room temperature for about 25 minutes.
In the meantime prepare the glaze by mixing the mustard, honey, brown sugar and sherry vinegar, until you get a homogeneous paste.
Place the ham in the oven and bake at 345°F for about 45 minutes.
When the time has elapsed, remove the ham from the oven and brush it with 3/4 of the glaze.
Return ham to the oven and bake for a further 20 minutes.
Pour the remaining glaze over the roasted ham. Bake for 5 more minutes, basting frequently with the oil garlic sauce.
Let rest for about 20 to 25 minutes before serving.
Serve along with some vegetables, mashed potatoes, sautéed fruit, etc.
