INGREDIENTS

  • 500 gr. Minced beef.
  • 175 gr. Minced pork.
  • 2 Medium onions.
  • 1 Celery.
  • 2 Carrots.
  • 3 Garlic cloves.
  • 200 gr. Sliced bacon.
  • 2 Eggs.
  • 100 ml.  Liquid cream 18 % fat.
  • 100 gr. Crackers.
  • 1 Teaspoon soya sauce.
  • 2 tbsp. worcestershire sauce.
  • Salt.
  • Black pepper.
  • 1/2 Tsp. cinnamon or grinded nutmeg.
  • Parsley.
  • Mild olive oil , 0.4 º.

FOR THE GLAZE

  • 50 gr. Brown sugar.
  • 75 ml . Ketchup.
  • 50 ml . Balsamic vinegar.

DIRECTIONS

Chop the onion , carrot , celery, and garlic into fine brunoise, poach in a Magefesa Vitrified Fit Skillet with some olive oil, move it away and let it cool. When cool,  put it in the mixing bowl of a Magefesa Combinato Food Processor. We add the eggs , cream, crackers , soya sauce, the worcestershire sauce and parsley , grind until we obtain an homogeneous mixture. Mix the meat with the powdered mixture kneading it well with your hands , season with salt and spices to taste. Place the dough on a baking sheet wrapped with non stick cooking paper. Shape and press it. Cover with the glaze and with slices of bacon. Glacé it again.
Insert in the preheated oven at 356°F for 50 or 60 min. In order to cut the cake we will let it cool at least for about half an hour, so that it does not crumble. It may be served with steamed vegetables , boiled potatoes, mayonnaise , mustard sauce, red fruits , mushrooms or sautéed mushrooms, etc.
Tips
When working with minced meat it is advisable that it is freshly ground to avoid contamination and it will be more juicy. We can prepare the cake with other meats such as lamb or poultry. The mixture of pork meat is made to provide the beef with fat and juiciness.
