Tonkatsu sauce by Magefesa USA



  • 125 ml Tomato paste or ketchup
  • 30 ml. Worcestershire sauce
  • 50 ml. soya sauce
  • 30 ml. rice vinegar
  • 1 tbs. Japanese or Dijon mustard
  • 1/2 tbs. Powdered garlic
  • 5 gr. Fresh ginger

Peel and grate the ginger. Mix all the ingredients in a bowl until we get thick and bright sauce. If we use tomato paste to make it, we will add one tbs. sugar to the sauce to get the sweet taste that ketchup provides.
This sauce can perfectly accompany both fish and meat fried dishes, potatoes and rice.  The original Tonkatsu recipe is referred to a boneless pork chop coated with panko, which is accompanied by julienned cabbage, rice or miso soup.
