- 8 Eggs.
- 200 gr. Diced bacon or Iberian ham.
- Mild olive oil.
- Sweet or spicy paprika to taste.
- Maldon sea salt flakes.
- Recently ground black pepper.
- Cured sheep cheese.
- Chopped chive.
Heat olive oil in a Magefesa Delicia skillet and sauté diced bacon slightly. Add the eggs in a way that they remain well shared, powder chopped chive over them and season to taste.
Let the whites curdle over medium-high heat so that they get browned on the bottom and yolks are done to perfection on top. It will be as if it were an omelette made with fried eggs and it is going to be served with powdered paprika; salt flakes and some cured sheep cheese chips.
Bacon may be substituted by ham, chorizo, etc. Serve some French fries as garnish.
